An interest only mortgage is one whereby you pay the interest charged by your lender each month but do not reduce the capital borrowed. The main advantage of this type of mortgage therefore is that the monthly repayments are lower than for a repayment remortgage. However, at the end of the term of the interest only mortgage you will still owe the full original amount borrowed and will need some means of repaying this.
If you intend staying in the property for the full term of the mortgage (typically 25 years) you may speculate that by this time the original amount borrowed will be sufficiently small due to the effects of inflation and, therefore, easy to repay. Alternatively you can take out a savings plan at the same time as you take out the mortgage that will mature and pay off the mortgage at the end of the 25 year period.
